Stuffed Chicken Breast Parmesan Recipe
Not your ordinary chicken parmesan. Goes great with crusty bread and a side salad.You have yourself a great meal. Easy to prepare in advance.

Ingredients
  • 3/4 cups shredded mozzarella
  • 2 Tbsp. minced parsley
  • 4 chicken breasts, trimmed and pounded thin
  • 1 cup grated Parmesan cheese
  • 1/2 cup flour
  • 4 tbsp. olive oil
  • 4 cups tomato sauce
  • Toothpicks

Directions
  1. Preheat oven to 400.
  2. In a small bowl stir together mozzarella and parsley.
  3. Sprinkle down center of chicken.
  4. Roll up and secure with toothpick.
  5. In a bowl combine 1/2 cup parmesan cheese and flour.
  6. Dredge chicken roll in mixture.
  7. In a skillet on medium-high heat, add olive oil. Add Chicken cooking for 6-8 min. Remove toothpicks.
  8. Place sauce on bottom of baking dish and add the chicken.
  9. Top with more sauce, parmesan cheese and mozzarella.
  10. Bake for 15-20 min.
  11. Enjoy.

This is super close the my Porky Doodle Doo's! I had not considered Parmesean cheese. I will have to try your recipe out. Thanks a bunch.


Good recipe. The only suggestion I would make is to wait until there are only 5 minutes to go before topping with the additional parmesan and mozzarella. Otherwise the cheese gets a little burned.
