Brown Rice, Grain And Lentil Salad

- 1 cup uncooked SooFoo ( brown rice, grains and brown lentils ) shopping list
- water or broth to cook shopping list
- 1/2 red bell pepper chopped shopping list
- 1/2 yellow bell pepper chopped shopping list
- 2 Tbs chopped red onion shopping list
- 1 cup cherry tomatoes halved shopping list
- 1 cup cooked broccoli florets chopped shopping list
- 1 garlic clove minced shopping list
- chopped parsley or herb of choice chopped shopping list
- Dressing: shopping list
- extra virgin olive oil, sweet or fruity vinegar of choice, Dijon mustard shopping list
- sea salt and coarse black pepper to taste shopping list
How to make it
- Cook the rice and grains as package instructs until cooked and
- brown rice and grains and lentils are tender and all water ( or broth ) is absorbed, about 45 minutes-1 hour.
- Drain and let cool to warm
- Blend in the chopped vegetables and garlic
- Moisten with olive oil and vinegar to taste
- Stir is some Dijon mustard to taste
- Blend in the herbs of choice ( parsley, cilantro, etc )
- Season with salt and pepper to taste
- Serve warm or chilled.
