Pomegranate Vinegrette

This is a tasty blend of ingredients which can with salad greens, poultry salads, or even to glaze grilled or broiled salmon. Double recipe if desired. Nice piquant flavor .
Ingredients
- 1/4 cup good quality olive oil shopping list
- 2 TBS red wine vinegar shopping list
- 4 TBS bottled pomegranate juice shopping list
- 1 TBS Dijon mustard shopping list
- 1 TBS honey shopping list
- salt & pepper to taste shopping list
How to make it
- Whisk all together
- Place in a salad dressing bottle
- Shake well before using
- Increase recipe as desired

This is delicious!! I often find red wine vinegar intense but the pomegranate juice and honey (I used maple syrup though) pleasantly mellowed it. I used a handheld froth blender to blend the ingredients which lightened the color. If I had just vigoro...more
