  Pomegranate Vinegrette
  I made this recipe for IMI2's February 2020 "recipes that are red" Challenge.
  
  My review: This is delicious!! I often find red wine vinegar intense but the pomegranate juice and honey (I used maple syrup though) pleasantly mellowed it. I used a handheld froth blender to blend the ingredients which lightened the color. If I had just vigorously stirred it would have stayed a gorgeous shade of red colored like that of the pomegranate juice. Would be ideal to have on the table for Christmas or Valentines Day!!
