Chinese Chicken Congee

- 8 cups chicken stock shopping list
- 1/4 cup long grain rice shopping list
- 2 tablespoons glutinous (sticky) rice shopping list
- 1 cup chopped cooked chicken shopping list
- salt and freshly ground pepper to taste shopping list
- Shredded lettuce for garnish shopping list
How to make it
- Bring chicken stock to a boil in a large pot over high heat.
- Reduce heat to low then stir in rice and simmer covered for 2 hours stirring often.
- Add chicken, salt and pepper then simmer 2 minutes until chicken is heated through.
- Serve garnished with shredded lettuce.
