How to make it

  • Bring chicken stock to a boil in a large pot over high heat.
  • Reduce heat to low then stir in rice and simmer covered for 2 hours stirring often.
  • Add chicken, salt and pepper then simmer 2 minutes until chicken is heated through.
  • Serve garnished with shredded lettuce.
