Riz Au Saffron (saffron Rice)

- Pinch of saffron shopping list
- 3 tblsp olive oil shopping list
- i large onion, finely chopped shopping list
- 1/2 cup almonds shopping list
- 1 cup long grain rice shopping list
- 1/4 tsp fresh nutmeg shopping list
- 1 bay leaf shopping list
- 1 tsp salt shopping list
- pepper shopping list
How to make it
- Stir saffron into 2 tblsp hot water and set aside
- Heat olive oil in pan add onions and nuts then cook over medium heat, stirring for about 5 minutes or until onion is translucent, lower heat, stir in rice, add saffron and its water, the nutmeg, bay leaf, salt and pepper, 2 cups of water.
- Bring to the boil, reduce heat to simmer, cover and cook 15-18 minutes until liquid is absorbed and the rice is tender. Fluff with fork and remove bay leaf!
