How to make it

  • Stir saffron into 2 tblsp hot water and set aside
  • Heat olive oil in pan add onions and nuts then cook over medium heat, stirring for about 5 minutes or until onion is translucent, lower heat, stir in rice, add saffron and its water, the nutmeg, bay leaf, salt and pepper, 2 cups of water.
  • Bring to the boil, reduce heat to simmer, cover and cook 15-18 minutes until liquid is absorbed and the rice is tender. Fluff with fork and remove bay leaf!
