How to make it

  • Preheat oven to 350F
  • Mix flour, sugar and salt.
  • Beat egg yolks with soymilk, add to dry ingredients.
  • Blend in lemon juice and rind.
  • Beat egg whites until stiff.
  • Fold egg whites into lemon mixture.
  • Immediately pour into a large greased ramekin or high-sided baking dish.
  • Place in a hot water bath and bake 45 minutes.
  • Serve chilled.
