Ingredients
  • ½ cup superfine sugar
  • 2 tbsp white rice flour
  • ½ tsp salt
  • 2 eggs, separated
  • 1 c plain low-fat soymilk
  • 2 tbsp lemon juice
  • 1 ½ tbsp grated lemon zest

Directions
  1. Preheat oven to 350F
  2. Mix flour, sugar and salt.
  3. Beat egg yolks with soymilk, add to dry ingredients.
  4. Blend in lemon juice and rind.
  5. Beat egg whites until stiff.
  6. Fold egg whites into lemon mixture.
  7. Immediately pour into a large greased ramekin or high-sided baking dish.
  8. Place in a hot water bath and bake 45 minutes.
  9. Serve chilled.
