Lemon White Chocolate Brownies

- Brownies: shopping list
- 12 tablespoons butter shopping list
- 6 ounces white chocolate, cut into 1 inch pieces shopping list
- 1 cup sugar shopping list
- 4 eggs shopping list
- 4 tablespoons fresh squeezed lemon juice shopping list
- 1 tablespoon lemon zest shopping list
- 1/2 teaspoon salt shopping list
- 1 1/2 cups flour shopping list
- Glaze: shopping list
- 4 ounces white chocolate shopping list
- 1 1/2 tablespoons cream or half and half shopping list
How to make it
- For the brownies, melt the butter and white chocolate in a glass measuring cup for about 1 minute (or less, depending on your microwave power) on High in the microwave. Stir until white chocolate melts into the melted butter.
- In a separate bowl, beat sugar and eggs with a mixer until creamy. Beat in the lemon juice and zest, then the melted white chocolate and butter mixture, beating until smooth and creamy.
- Beat in the flour and salt, mixing just until combined.
- Pour batter into a buttered 9 x 13 baking dish, and bake at 350 degrees for 22 - 25 minutes, until a toothpick can be inserted into the center and comes out clean.
- While brownies are baking, make the glaze, by melting the white chocolate with the half and half.
- Remove pan from oven when brownies are done. While the brownies are still hot from the oven, drizzle the melted glaze over the brownies and very gently spread it over the brownies with the back of a spoon (I like to first poke holes throughout the top of the brownies with a fork so the glaze soaks in nicely). Allow the brownies to cool completely before cutting and storing them.
