Bruschetta Topping

- 2 cups diced tomatoes, peeled if fresh shopping list
- 2 cloves garlic, minced shopping list
- 3 green onions, minced shopping list
- ⅔ cup minced fresh basil (I used lime basil) shopping list
- ¼ cup minced fresh oregano shopping list
- 1 tbsp white wine shopping list
- ½ tbsp white wine vinegar shopping list
- 1 tsp lime juice shopping list
- 1 tsp kosher salt shopping list
- ¼ tsp coarse black pepper shopping list
- 2 tbsp tomato paste shopping list
How to make it
- Combine all the ingredients in a pot and bring to a simmer.
- Cook 5-10 minutes, stirring occasionally.
- If preserving for shelf-storage: can in a waterbath for 20 minutes.
- Otherwise, refrigerate up to 2 weeks or freeze up to 6 months.
