Chilled Brown Rice And Vegetable Salad With Brazil Nut-dusted Chicken

- 1 cup baby spinach shopping list
- 1/4 cup sliced white button mushrooms shopping list
- 1/4 cup sliced green onions shopping list
- 1/4 cup sliced red bell pepper shopping list
- 1/4 cup sliced tomato shopping list
- 1/2 cup cooked, cooled brown rice shopping list
- 3 ounces cooked boneless, skinless chicken breast shopping list
- 2 tablespoons brazil nuts, crushed shopping list
- 3 or 4 fresh basil leaves, chopped, or 1 teaspoon dried basil shopping list
- 1 tablespoon lemon juice shopping list
- 2 tablespoons balsamic vinegar shopping list
- dash cracked black pepper shopping list
How to make it
- Roll the cooked chicken breast in the crushed Brazil nuts, and set aside. Toss the chilled rice with the spinach, sliced vegetables, basil, lemon juice, vinegar, and pepper. Chill the salad, and serve with the chicken.
