Tuna Stuffed Tomatoes

- 4 small vine-ripened tomatoes shopping list
- 1/2 cup baby spinach shopping list
- 1/8 cup finely chopped green onion shopping list
- 1/8 cup finely chopped celery shopping list
- 1/2 cup cooked quinoa, cooled shopping list
- 3 ounces chunk light tuna canned in water, drained shopping list
- 2 tablespoons walnuts, chopped shopping list
- 2 tablespoons balsamic vinegar shopping list
- 1 tablespoon lemon juice shopping list
- 1/4 teaspoon minced garlic shopping list
- dash cracked black pepper shopping list
How to make it
- Slice the tops off the washed tomatoes, scoop out seeds with a melon baller, and set aside. In a large bowl, toss the spinach, green onion, celery, and quinoa with the vinegar, lemon juice, garlic, and pepper. Fold in the tuna and walnuts. Stuff the tomatoes with the quinoa mixture, ch ill, and serve.
