  • Slice the tops off the washed tomatoes, scoop out seeds with a melon baller, and set aside. In a large bowl, toss the spinach, green onion, celery, and quinoa with the vinegar, lemon juice, garlic, and pepper. Fold in the tuna and walnuts. Stuff the tomatoes with the quinoa mixture, ch ill, and serve.
