Fish Tacos With Cilantro-Jalapeno Guacamole

- 1 cup fresh spinach shopping list
- 1/2 cup chopped onions shopping list
- 1/2 cup grape tomatoes, sliced in half shopping list
- 1/4 cup low-sodium vegetable broth shopping list
- 2 soft taco-size whole-corn tortillas shopping list
- 3 ounces cooked wild pollack shopping list
- 1/4 medium avocado, mashed shopping list
- Dash freshly ground cracked black pepper shopping list
- 1 teaspoon fresh, chopped cilantro shopping list
- 1 small jalapeno, diced shopping list
- wedges of fresh lime shopping list
How to make it
- Mix the pepper, cilantro, and jalapeno into the avocado to make a guacamole, and chill. On the stove top over medium heat, saute the spinach, onions, and tomatoes in the broth until tender. Warm the tortillas, fill with the fish and sauteed vegetables (serve extra vegetables on the side), garnish with fresh-squeezed lime juice, and top with the guacamole.
