How to make it

  • Combine rice, shrimp, sliced mushrooms, water chestnuts, green pepper, roasted peppers, parsley and chives in a large bowl; toss gently.
  • Combine olive oil, vinegar, soy sauce, mustard and hot sauce in a small bowl; stir well
  • Pour dressing over rice mixture; toss gently. Add salt and pepper to taste. Cover and chill at least 1 hour
