Cold Shrimp Rice Salad

- 3cups cooked rice shopping list
- 2 cups cooked, peeled and deveined shrimp shopping list
- 1/2 pound fresh mushrooms, sliced shopping list
- 1 cup sliced water chestnuts shopping list
- 1 cup chopped green pepper shopping list
- 4 ounce jar sliced roasted peppers,drained shopping list
- 1/4 cup chopped fresh parsley shopping list
- 1/4 cup chopped fresh chives shopping list
- 1 cup olive oil shopping list
- 3 tablespoons white vinegar shopping list
- 3 tablespoons soy sauce shopping list
- 2 teaspoons Dijon mustard shopping list
- 1/2 teaspoon hot sauce shopping list
- salt and pepper to taste shopping list
How to make it
- Combine rice, shrimp, sliced mushrooms, water chestnuts, green pepper, roasted peppers, parsley and chives in a large bowl; toss gently.
- Combine olive oil, vinegar, soy sauce, mustard and hot sauce in a small bowl; stir well
- Pour dressing over rice mixture; toss gently. Add salt and pepper to taste. Cover and chill at least 1 hour
