How to make it

  • Preheat over to 350 degrees F
  • Take a ramakin and coat the inside with butter, then sprinkle sugar over all the inside surfaces. This will help the souffle rise evenly.
  • Put sugar, cocoa powder, butter, cardamom, flour and water into a sauce pan. Cook on low heat until it comes together and thickens a little.
  • Whip the egg whites up with a beater until they reach stiff peaks.
  • Slowly fold the cocoa mixture into the egg whites.
  • Pour the souffle batter into the ramakin, and pull a knife across the top to flatten it. This will also help the souffle to rise evenly and not crack or break.
  • Place the souffle into the oven and bake for 20 - 25 minutes.
