How to make it

  • Marinade the prawns in a little salt and turmeric for about 30 minutes.
  • Heat oil in a frying pan.
  • Fry the prawns lightly, till they turn golden in colour.
  • Take out the prawns and to the same oil, add the chopped garlic.
  • Heat for a while, so that the flavour of the garlic is consumed by the hot oil.
  • Take out the garlic and add the bay leaves.
  • Coarsely pound the cardamom, cloves and cinnamon and add them too. Heat till the masala starts to crackle.
  • Add the ginger paste and cook for 5 mins.
  • Add the coconut milk, stirring continuously.
  • Add around 1 cup of water.
  • Add the red chilli powder, a pinch of turmeric powder and adjust salt according to taste. Stir and cook the gravy.
  • When the gravy starts to boil, add the golden-fried prawns.
  • Cook on low flame till the gravy thickens and acquires a creamy consistency.
  • Serve hot with steaming white rice.
