Carrot Ginger Soup

- 1/2 Cup butter shopping list
- 1/2 Cup Diced onion shopping list
- 1 Tablespoon Minced garlic shopping list
- 1/2 Cup flour shopping list
- 1 Teaspoon kosher salt shopping list
- 2# Grated carrots shopping list
- 5 Cups chicken stock shopping list
- 1 12oz Can Flat beer shopping list
- 1/2 Cup sour cream shopping list
How to make it
- Sauté Diced Onions and garlic in butter 4-5 minutes
- Add Diced Ginger and sauté another 3 or so minutes
- Gradually blend in flour and Kosher Salt and cook until mixture begins to brown
- Add Chicken Stock and carrots and bring to boil for just a moment.
- Add beer (If you add the beer before this boils it foams all over everything!)
- Remove from heat and use Blender Stick and blend until smooth
- Stir in Sour Cream
- (The first time I made this it was too “watery” so I added cornstarch mixed with water to thicken it)
