Peppery Green Beans Recipe
I used to just buy vegetables based on the meals I would cook. Lately though, I've been buying a variety of things to experiment. I'm sure this has been done in different ways, but it came out so well that I decided to share.

Ingredients
  • whole fresh green beans
  • 1/2 large capsicum red pepper
  • 1/2 small/medium vidalia onion
  • splash or two of lemon juice
  • 1 tablespoon butter or SmartBalance Butter
  • Lots of cracked pepper and cracked sea salt

Directions
  1. Trim ends from green beans, but leave whole.
  2. Slice capsicums lengthwise into strips
  3. Slice onion.
  4. Melt butter in pan on medium/high heat.
  5. Toss in veggies.
  6. Squeeze 1/2 lemon or a splash or two of lemon juice.
  7. Crack lots of pepper and sea salt; you decide.
  8. Saute for about 8 minutes or until onion is slightly opaque.
  9. I served this with broiled garlic chicken fillets over a bed of white sushi rice. It was low calorie and low glycemic index (G.I.)!
