How to make it

  • Marinade the chicken with olive oil and lime juice several hours or best overnight.
  • Place everything in a stock pot and bring to a boil and cover and simmer until chicken and vegetables are tender.
  • Adjust seasonings as desired
  • Ladle in bowls
  • Place fresh sliced avocado into each soup bowl
  • Note or use your slow cooker and cook low 4- 6 hours
