Mexican Style Chicken Soup

- 1 large whole chicken breast cut into cubes- bite size pieces shopping list
- 2 Tbs olive oil shopping list
- 2 Tbs fresh lime juice shopping list
- 1 large red bell pepper finely chopped shopping list
- 1 large onion finely chopped shopping list
- few cloves garlic chopped shopping list
- 1 Tbs dried parsley shopping list
- 1 Tbs taco seasoning shopping list
- 1 dried chipotle pepper shopping list
- 6-8 cups chicken broth or use water with chicken bouillon soup base if desired shopping list
- 1 large ripe avocado shopping list
- optional: cooked rice or barley to add to the soup shopping list
How to make it
- Marinade the chicken with olive oil and lime juice several hours or best overnight.
- Place everything in a stock pot and bring to a boil and cover and simmer until chicken and vegetables are tender.
- Adjust seasonings as desired
- Ladle in bowls
- Place fresh sliced avocado into each soup bowl
- Note or use your slow cooker and cook low 4- 6 hours
