Chicken Marrakesh

- 1 large onion coarse chopped shopping list
- 2 large cloves garlic smashed shopping list
- 2 large peeled carrots cut in chunky pieces shopping list
- 2 large peeled sweet potatoes cut in chunky pieces shopping list
- 1, 15 oz can chickpeas, drained shopping list
- 1, 14-15 oz can diced tomatoes undrained shopping list
- 1 small can sliced mushrooms drained shopping list
- 2 lbs chicken breasts cubed shopping list
- spices: shopping list
- 1 tsp cinnamon (or a mix of cinnamon-nutmeg-cloves- ) shopping list
- 1 1/2 tsp tumeric shopping list
- 1 1/2 tsp cumin shopping list
- 1 tsp dried parsley shopping list
- juice from a small lemon shopping list
- 1 tsp salt or to taste shopping list
- black pepper to taste shopping list
How to make it
- Place all in your slow cooker. Cook high 4 hours or everything is tender
- Serve with couscous , quinoa or rice
- Note: other adaptations add raisins or sweet dried fruit to the recipe
- This dish also lends itself to lamb/beef as well
