Dark Spice Cake

- ¼ cup canola oil shopping list
- ¼ cup fancy molasses shopping list
- ⅔ cup demerara sugar (or dark brown sugar) shopping list
- 1 tbsp fresh grated ginger shopping list
- 1 tbsp cinnamon shopping list
- 1 tsp allspice shopping list
- ½ tsp cloves shopping list
- ½ tsp salt shopping list
- 1 cup (boxed) unsweetened coconut or almond milk shopping list
- 1 tbsp lemon juice shopping list
- ½ cup sorghum flour shopping list
- ½ cup quinoa flour shopping list
- ½ cup brown rice flour shopping list
- ¼ cup tapioca starch shopping list
- ½ tsp guar gum shopping list
- 1/3 cup gluten-free oats shopping list
- 3 tbsp ground flaxseed shopping list
- 2 tbsp whole flaxseed shopping list
- 1 tsp baking soda shopping list
- ¼ cup dark raisins (optional, not included in NI) shopping list
How to make it
- Preheat the oven to 350F and grease a 9” pan.
- In a bowl, whisk together the oil, molasses, sugar, ginger, cinnamon, allspice, cloves, salt, coconut milk and lemon juice.
- Add the flours, starch, guar gum, oats, flax and baking soda, mix well.
- Mix in raisins, if using.
- Bake for 45 minutes. Cool completely in the pan before turning out.
- This is better the day after!
