How to make it

  • Preheat the oven to 350F and grease a 9” pan.
  • In a bowl, whisk together the oil, molasses, sugar, ginger, cinnamon, allspice, cloves, salt, coconut milk and lemon juice.
  • Add the flours, starch, guar gum, oats, flax and baking soda, mix well.
  • Mix in raisins, if using.
  • Bake for 45 minutes. Cool completely in the pan before turning out.
  • This is better the day after!

    I would use coconut oil, but otherwise it sounds so very good!
