Hot And Sweet Pepper Confit

- 2 tbsp olive oil shopping list
- 1 small onion, minced shopping list
- 8 hot cherry peppers, seeded and diced shopping list
- 4 sweet cherry peppers, seeded and diced shopping list
- 1 small green pepper, seeded and diced shopping list
- ¾ cup off-dry white wine shopping list
- 1 tsp raw sugar shopping list
- ¼ tsp salt shopping list
- pinch black pepper shopping list
How to make it
- Heat oil in a medium saucepan over medium-low heat.
- Add onion and cook 10 minutes, until just beginning to colour.
- Add all the peppers, wine, sugar, salt, and pepper.
- Cover, and cook until wine is almost absorbed, about 60 minutes, stirring occasionally.
- Reduce heat to low, uncover and cook, stirring occasionally, until peppers are tender, about 15 minutes.
