How to make it

  • Heat oil in a medium saucepan over medium-low heat.
  • Add onion and cook 10 minutes, until just beginning to colour.
  • Add all the peppers, wine, sugar, salt, and pepper.
  • Cover, and cook until wine is almost absorbed, about 60 minutes, stirring occasionally.
  • Reduce heat to low, uncover and cook, stirring occasionally, until peppers are tender, about 15 minutes.
