Sweet Potato Chips With Lime

- 1 medium sweet potato per person- I used 3 medium shopping list
- olive oil ( approx 1/4 cup ) shopping list
- coarse salt, pepper, shopping list
- fresh squeezed lime juice ( 1 large lime should do it ) shopping list
- extra lime wedges as a garnish shopping list
How to make it
- wash sweet potatoes in their skins
- pat dry
- Cut off ends
- Slice thin ( not paper thin )- I used a hand mandolin
- Place slices in a bowl and add olive oil and coat and turn well to make sure each slice is wet with olive oil
- Season with salt and pepper
- Place in roasting pan large enough to place slices in a single layer
- Roast in a preheated 450F until potatoes are cooked and browned at the edges, turn if desired
- Remove from oven and squeeze lime juice over the potatoes
- Serve immediately with extra lime wedges
