How to make it

  • wash sweet potatoes in their skins
  • pat dry
  • Cut off ends
  • Slice thin ( not paper thin )- I used a hand mandolin
  • Place slices in a bowl and add olive oil and coat and turn well to make sure each slice is wet with olive oil
  • Season with salt and pepper
  • Place in roasting pan large enough to place slices in a single layer
  • Roast in a preheated 450F until potatoes are cooked and browned at the edges, turn if desired
  • Remove from oven and squeeze lime juice over the potatoes
  • Serve immediately with extra lime wedges
