Peanut Butter Cup Blondies

- 2 tbsp ground flaxseed shopping list
- 2 tbsp ground chia seed shopping list
- ½ cup hot water shopping list
- ⅓ cup butter, softened shopping list
- ⅓ cup crunchy peanut butter shopping list
- ¼ cup sugar shopping list
- ¼ cup packed brown sugar shopping list
- 6 packets Truvia (or ¼ cup more sugar) shopping list
- 1 tbsp vanilla shopping list
- 1 cup whole wheat flour shopping list
- 1 tsp baking powder shopping list
- pinch nutmeg shopping list
- ½ tsp salt shopping list
- 14 Chocolite Peanut butter Cup Patties, chopped (about 20 miniature Sugar Free Miniature Reese's Peanut butter Cups) shopping list
How to make it
- Heat the oven to 350°F and grease a 9” pan.
- Whisk together the flaxseed, chia seed and hot water, set aside.
- In a large bowl, beat together the butter, peanut butter, sugars and Truvia (if using).
- Add flax mixture and vanilla, beating well.
- Stir in the flour, baking powder, nutmeg and salt.
- Fold in chocolate chips and peanut butter cups.
- Spread into a greased 9” pan. for 45-50 minutes or until a toothpick inserted near the center comes out clean.
- Cool on a wire rack, then cut into bars
