How to make it

  • Note: Dressing is best when made the day before and allowed to meld.
  • Whisk all dressing ingredients together and refrigerate until ready to serve salad.
  • Bring a pot of water to a boil.
  • Trim tough stems off broccoli and cut into small pieces.
  • Place rotini in boiling water with the oil added. When 5 minutes remain in pasta cooking time, add broccoli to pot. Drain and cool. When fully cool, add cubed chicken, parsley and green onions. Chill.
  • At serving time, mix dressing and salad together and serve.
