No Mayo Lobster Sandwich

- 1.5 lbs fresh lobster meat, cooked and chilled shopping list
- 3 tablespoons fresh lemon juice shopping list
- 1/3 cup extra-virgin olive oil shopping list
- 1/2 tsp sea salt shopping list
- 1/3 cup thinly sliced scallions, with some green shopping list
- 1/4 cup finely chopped peeled celery shopping list
- 1/4 cup celery leaves shopping list
- 1/4 cup chopped flat-leaf parsley shopping list
- 1/2 stick butter shopping list
- 3 garlic cloves, smashed shopping list
- 6 hot dog buns, preferably top-split (I prefer whole wheat) shopping list
- optional - finish with alderwood smoked sea salt shopping list
How to make it
- Preheat broiler. Whisk together lemon juice, oil, and 1/2 tsp sea salt in a large bowl. Whisk in scallions, celery, celery leaves, and parsley, then add lobster and gently toss.
- Melt butter with garlic in a small saucepan over low heat, mashing garlic with a spoon.
- Brush inside of buns with garlic butter. Open and broil till golden, about 2 minutes. Depends on your oven and broiler, so watch them.
- Fill buns with lobster.
- For a Southwestern Flair on this (yes, there are no lobster in the SW... but there are grocery stores.) substitute Lime for Lemon and Cilantro for Parsley.
