How to make it

  • Preheat broiler. Whisk together lemon juice, oil, and 1/2 tsp sea salt in a large bowl. Whisk in scallions, celery, celery leaves, and parsley, then add lobster and gently toss.
  • Melt butter with garlic in a small saucepan over low heat, mashing garlic with a spoon.
  • Brush inside of buns with garlic butter. Open and broil till golden, about 2 minutes. Depends on your oven and broiler, so watch them.
  • Fill buns with lobster.
  • For a Southwestern Flair on this (yes, there are no lobster in the SW... but there are grocery stores.) substitute Lime for Lemon and Cilantro for Parsley.
