Cumin Seared Pork & Warm Apple Slaw

Pork
- 4 3/4in pork steaks/chops (I used a loin roast sliced) shopping list
- 1 Medium Onion shopping list
- 1T ground Cumin shopping list
- 1t cayenne shopping list
- 1t Oregano shopping list
- 1t basil shopping list
- 1/2 t chili powder shopping list
- 1T Red Wine Vinegar shopping list
Slaw
- 1/2 c Olive Oil shopping list
- 1T Red Wine Vinegar shopping list
- 2 Firm apples(I used Fiji)Cored shopping list
- 1/2c Grape Tomatoes shopping list
- 1 Colored bell pepper(I used Orange) shopping list
- 2T capers shopping list
- 1/3c unsweet apple sauce shopping list
- Salt & Pepper to taste shopping list
How to make it
Marinade
- 1. Zest/Shred Onion into baking dish
- 2. Squeeze juice from onion into dish and put the "pulp" in a medium bowl.
- 3.Add herbs/spices and Vinegar to dish and whisk together with onion juice.
- 4. Put pork in dish and toss to coat.
- 5. Let sit 20 minutes flipping at 10 minutes
Dressing
- 1. Add apple sauce to bowl with onion pulp
- 2.whisk in vinegar, oil, and capers then S&P
- 3. Let rest at room temp
Slaw
- 1. Dice Apples(about 1in pieces)
- 2. Cut Tomatoes into 3rds
- 3. Cut Pepper into strips relative to the size of your apples and tomatoes
- 4. Place all in saute pan and add a couple spoonfuls of dressing
Cook It Up
- 1. Heat grill pan/griddle to med-high
- 2. Cook pork aprox. 6 min on each side(depending on your cut it might take less or more you be the judge)
- 3. Let pork rest(while you finish slaw)
- 4. Add slaw pan to heat and toss the slaw to get good coat on everything
- 5. Heat for about a minute then reduce heat to med-low and cover
- 6.Stir occasionally and let cook for about 10 minutes(depends on how soft you want your apples).
Notes:
- You may choose to add extra dressing upon plating but it's not necessary.
