Two - Tomato Chutney

- 3 medium tomatoes, halved shopping list
- 1 small white onion, chopped shopping list
- ¾ cup chopped sun dried tomatoes shopping list
- ¼ cup raisins shopping list
- ¼ cup chopped dried apple shopping list
- ¼ cup brown sugar shopping list
- 1 tbsp honey (or agave for strict vegans) shopping list
- ⅓ cup water shopping list
- ¼ cup cider vinegar shopping list
- 1 tbsp minced ginger shopping list
- 2 cloves garlic, minced shopping list
- 2 tsp curry powder shopping list
- ½ tsp cinnamon shopping list
- ½ tsp dried red pepper flakes shopping list
- ¼ tsp salt shopping list
How to make it
- Combine all the ingredients in a saucepan over high heat and bring to a boil.
- Reduce heat and cook, uncovered, for 20 minutes, until thick. Stir occasionally to prevent sticking.
- Adjust seasoning to taste and spoon into hot sterilized jars.
- Process for 10 minutes in a waterbath and allow to cool, undisturbed, on a wire rack.
