How to make it

  • Heat the oven to 200C.
  • Place the chicken skin side down on a plate and pour the wine over it. Then season with a sprinkle of smoked paprika, cumin, salt and pepper and a drizzle of olive oil (make sure everything in coated - use your hands!). Leave for marinade while you peel and rinse the potatoes, onion and garlic.
  • Then put the potatoes, onion, garlic onto a baking dish and season to taste with salt and pepper. Place the chicken (skin side up) in the centre along with the marinade juices and bake. Add another drizzle of olive oil if you think it is necessary (I did).
  • My chicken n' potatoes took about 45 min to fully bake and caramelize the onions and sweet potatoes. I guess it really depends on your oven. I would start taking picks after 30 minutes baking.
