How to make it

  • Pour boiling water over raisins, stir in rum flavoring and loosely cover. Allow raisins to soak for at least 4 hours (or overnight). Drain well and set aside.
  • Preheat oven to 350 degrees.
  • Whisk together the flour, baking soda, baking powder, salt and cinnamon. and set aside.
  • Cream butter and sugars with mixer--beat until light and fluffy. Add eggs and vanilla and mix well.
  • Stir in flour mixture by hand and mix until no flour is visible. It's important to not over mix as this develops the gluten, making the cookie tough. Add and stir in the oats and (well-drained) raisins.
  • Drop 2 T. portions (a heaping cookie scoop) onto a parchment lined cookie sheet.
  • Bake, on the center rack of oven, for 11-14 mins (mine usually take 14 mins) until lightly golden
  • Cool on parchment for about 2 mins, then cool completely on wire racks.
