How to make it

  • Microwave butternut squash whole for 2-3 minutes at high (depending on size)
  • Cut top part of squash off, about 1/8", as well as bottom an 1/8th of and inch.
  • Using a vegetable peeler, peel squash...(groan)
  • Stand Squash up and cut down middle into two halves.
  • Scoop out seeds and pulp and discard.
  • Cut each half in half lengthwise and then cut each quarter into chunks.
  • Spray disposable foil pan with cooking spray or oil or butter.
  • Arrange squash cubes in a single layer in pan.
  • Sprinkle with brown sugar and cinnamon,
  • Dab pats of butter over squash.
  • Place pan of squash on heated BBQ grill and close lid.
  • Using a metal spatula, flip squash cubes and rotate pan on grill until squash is tender and caramelized to your liking.
  • Enjoy!
