Pumpkin Chip Bars

- 10 oz silken tofu, or 4 eggs shopping list
- 1 ¼ cups sugar shopping list
- ½ cup canola oil shopping list
- ½ cup applesauce shopping list
- 1 tbsp vanilla shopping list
- 2 cups mashed pumpkin shopping list
- 1 ½ cups flour shopping list
- ½ cup wheat bran shopping list
- ¼ cup wheat germ shopping list
- ½ tsp nutmeg shopping list
- 1 tsp cinnamon shopping list
- 2 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1 tsp salt shopping list
- ¼ cup chocolate chips or candy coated chocolate shopping list
- 1 (1.5 oz) bar chocolate-covered toffee (i.e. Skor), chopped shopping list
- ¼ cup toasted pumpkin seeds shopping list
How to make it
- Preheat oven to 350°F. Grease a 15x10x1 pan.
- In a food processor, puree the tofu, sugar, oil, applesauce, vanilla and pumpkin.
- Pulse in the flour, bran, germ, nutmeg, cinnamon, baking powder, baking soda and salt to form a thick batter.
- Pulse in the chocolate chips, toffee and pumpkin seeds.
- Bake for 25-30 minutes. Cool in the pan before slicing.
- Makes one 15x10x1 pan, 30 squares
