Salsa El Fresco And Pasta Sauce

- 4 tomatoes shopping list
- 2 cloves garlic shopping list
- 2 table spoons pepper corns shopping list
- 2 table spoons salt shopping list
- 1 jalepeno pepper shopping list
- 1 tea spoon vinegar shopping list
- 2 shallots shopping list
- 1 tea spoon thyme shopping list
- 1 tea spoon basil shopping list
- 2 bay leaf shopping list
- 1 tea spoon cilantro shopping list
- 2 table spoon tomato paste or ketchup(paste is preffered but ketchup is basically sweetened tomato paste) shopping list
How to make it
- cut petals off the tomatoes until you reach the juicy seed area. Put the pulp in one bowl and the core in another.
- Dice the Tomato pulp
- Combine the garlic, pepper, and salt in a mortar and pestle or grinder
- chop shallots and jalepenos
- tear up cilantro
- combine dice tomato, half the garlic peper salt mixture, shallot, jalenpenos, and vinegar, let sit for at least 1 hour, thats your salsa for a party of 6-8.
- combine remaining garlic salt pepper with basill,thyme tomato paste/ketchup, and tomato cores.
- Pulse blend until smooth
- add bay leaves and cook for 45 minutes. Now you have delicious tomato sauce for 1-2 people. Of course you could just freeze the tomato cores until you have enough to make a large batch of sauce.
