How to make it

  • cut petals off the tomatoes until you reach the juicy seed area. Put the pulp in one bowl and the core in another.
  • Dice the Tomato pulp
  • Combine the garlic, pepper, and salt in a mortar and pestle or grinder
  • chop shallots and jalepenos
  • tear up cilantro
  • combine dice tomato, half the garlic peper salt mixture, shallot, jalenpenos, and vinegar, let sit for at least 1 hour, thats your salsa for a party of 6-8.
  • combine remaining garlic salt pepper with basill,thyme tomato paste/ketchup, and tomato cores.
  • Pulse blend until smooth
  • add bay leaves and cook for 45 minutes. Now you have delicious tomato sauce for 1-2 people. Of course you could just freeze the tomato cores until you have enough to make a large batch of sauce.
