How to make it

  • Melt butter slowly in skillet over medium heat.
  • Slice pickle lengthwise into thin slices.
  • Slice cheese into thin pieces. It will crumble - no problem.
  • If using condiments, add them at this point. (I don't use any because I like to accent the flavor of the pickles and cheese combination.)
  • Place ham, then cheese, then sliced pickle on bread. Top with more goat cheese. Cover with additional condiment if desired, then top with second slice of bread.
  • Place in skillet and fry until the underside is browned then turn over and finish the top side. It should take no more than a few minutes. Remove from heat, slice into two diagonal sections, and serve.
