Sweet And Sour Crisp Fried Tofu

- 1 standard size block of extra firm tofu shopping list
Marinade:
- 2 tablespoons soy sauce shopping list
- 1 tablespoon cooking wine or 1 tablespoon dry sherry shopping list
- 3 drops sesame oil shopping list
- 2 tablespoons flour shopping list
- 2 tablespoons cornstarch shopping list
- 2 tablespoons water shopping list
- 1/4 teaspoon baking powder shopping list
- 1/4 teaspoon baking soda shopping list
- 1 teaspoon vegetable oil shopping list
- 2 cups cornstarch (for dredging the marinated tofu) shopping list
Sauce:
- 1/2 cup water shopping list
- 1 cup chicken (or vegetable) broth shopping list
- 1/4 vinegar shopping list
- 1/4 cup cornstarch shopping list
- 1 cup brown sugar shopping list
- 2 tablespoons soy sauce shopping list
- 2 tablespoons sesame oil shopping list
- 1 teaspoon sriracha shopping list
- 1/4 teaspoon garlic powder shopping list
How to make it
- Cut the tofu into 1/2" cubes
- Mix the marinade ingredients (the first 9 ingredients listed) and marinate the tofu for 20 minutes in a shallow pan.
- Whisk together all of the sauce ingredients in a saucepan and bring to a boil, stirring constantly. Turn the heat down to low, stirring occasionally, and keep warm while you are deep-frying the tofu.
- Dredge the tofu in cornstarch.
- Deep-fry the tofu a few pieces at a time until golden brown, about 2 minutes.
- Remove with slotted spoon and drain on paper towels. Keep warm until all the tofu is fried.
- To serve, put the tofu over a bowl of rice, spoon over some sauce, enough to coat the tofu and a little extra to flavor the rice. Sprinkle on sesame seeds and serve immediately to keep the tofu from getting soggy.
