How to make it

  • Preheat the oven to 375F.
  • Place the leftover potatoes in a small baking dish.
  • Sprinkle the potatoes with parmesan.
  • Pour the cream over the potatoes.
  • Season with pepper and salt to taste.
  • Crack the eggs in the centre. See Photo
  • Bake for 15 to 20 min. The baking time depends on how runny your like your eggs. I like mine runny so 15 min did it for me.
