Sweet Potato Bake With Brown Sugar Topping

Aunt Bea's Sweet Potato Bake. She also made it with pureed carrots.
Ingredients
- 4-5 Sweet Potatoes (good size) or 8-9 smaller ones shopping list
- 1/2 c. butter (melted) shopping list
- 3/4 c. white sugar shopping list
- 1/3 c. milk shopping list
- 2 eggs (slightly beaten) shopping list
- 1 t. vanilla shopping list
- Topping ingredients: shopping list
- 1/2 c. brown sugar shopping list
- 1/3 c. butter (I use cold) shopping list
- 1/4 c. flour (all purpose) shopping list
- 1 c. nuts of your preference (I use walnuts) broken up shopping list
- Combine first 3 ingredients with a pastry blender until sand-like then add nuts. shopping list
How to make it
- Grease a pie plate. Preheat oven to 350
- Cook sweet potatoes either by boiling and draining or in a 400 degree oven until fork tender (around 40 minutes depending on size). Let them cool.
- In my kitchenaid I put the rest of the sweet potato ingredients and beat until mashed consistency.
- Make topping and add to top.
- Bake in oven for about 30 minutes.
