How to make it

  • Preheat the oven to 350F, line an 8” square pan
  • Beat the eggs in a large bowl until light.
  • Add the sugar, vanilla and citrus zests, beating well.
  • Mix in the flour, baking powder and salt until combined, then fold in the fruit and nuts.
  • Pour into the pan, smoothing the top.
  • Bake 35 minutes. Cool completely in the pan.
