Turkey Tetrazzini With Salsa Verde

- 2 cups baked turkey roughly chopped shopping list
- 1 medium onion , chopped shopping list
- 1 pkg mushrooms sliced shopping list
- 3 cloves garlic, minced shopping list
- 2-3 T flour shopping list
- 2 cups broth shopping list
- 1( 7 oz) can chile verde shopping list
- 1 small can diced green chiles shopping list
- 8 oz pasta,: spaghetti, angel hair spaghettini,or linguine broken into 2 inch pieces, cooked al dente shopping list
- 1/2 cup Tofutti's "better than sour cream" shopping list
- 1/2 cup parmesan shopping list
- 2 T. sundried tomatoes shopping list
- 1 cup chopped roasted red peppers shopping list
How to make it
- Using non-stick spray cover a large saute pan. Heat at med. high and add the onions, cook a few minutes and then add the mushrooms. After the mushrooms start leaking liquid,push the veggies away from the center and sprinkle the flour into the center and whisk away. Add a cup of broth, whisking along simmering for 15 minutes.. This will create a sauce which you combine with the veggies. Mix the salsa with the sour cream and add to the saute pan. Now stir in the garlic , green chiles, peppers and sundried tomatoes. and the turkey. Taste to correct seasonings. Stir in 1/4 cup parmesan Fold in the pasta and turn out into a 3 quart shallow baking dish. Sprinkle with the last 1l4 c. parmesan and bake at 350 degrees F for 25 minutes, or until the top is golden and the sides are bubbling.
