Muriel's Aebleskiver

- 3 eggs, separated shopping list
- 2 tsp. sugar shopping list
- 1/2 tsp salt shopping list
- 2 C buttermilk shopping list
- 2 C flour shopping list
- 1 tsp. soda shopping list
- 1 tsp. baking powder shopping list
How to make it
- Heat aebleskiver pan(s) on the stove.
- Beat the egg whites until they form stiff peaks.
- Beat the egg yolks.
- Add the sugar, salt, and buttermilk to the yolks and stir together.
- Sift together the flour, soda, and baking powder.
- Add the flour mixture to the buttermilk mixture.
- Fold in the beaten egg whites.
- Add a small bit of butter to each aebleskiver cups. Fill aebleskiver cups 2/3 full and cook until lightly brown on the outside. Turn the aebleskiver with a knitting needle or a fork to form a round ball. Let cook on the stove until browned all around.
- Keep warm in a 225 degree oven for 20 minutes to make sure the middle is set.
- To serve, split in half and serve with with applesauce, jam, and whipped cream.
