Broccoli Vegetable Soup

- 4 cups broccoli florets- fresh or frozen shopping list
- water or chicken broth to cover shopping list
- 1 small onion cut into quarters shopping list
- 1 clove of fresh garlic shopping list
- 2 Tbs dehydrated vegetables ( can get from a pkg soup mix, pkg vege dip etc ) shopping list
- salt and pepper to taste shopping list
- approx 1/3 cup gravy flour or as needed (ex Wondra brand instant flour ) or thickener of choice shopping list
- 1 Tbs butter shopping list
How to make it
- In a pot, add the broccoli , onion , garlic and dehydrated veges and cover with water or chicken broth.
- Bring to a boil and simmer until veges are tender.
- Either use a hand stick blender to blend right in the pot or remove to a regular t blender o puree the vegetable- you may rough blend if you want more texture.
- Now thicken the soup by gradually stirring in thickener of choice and stirring in the butter
- Season with salt and pepper
- Enjoy!
