How to make it

  • Preheat a rack in the center of the oven and preheat to 400 degrees(F).
  • Lightly butter 2.75 inch by 1.25 inch (3 ounce) muffin cups.
  • in a medium bowl, combine the bran and milk. Let stand 3 to 4 minutes, until soft.
  • In a large bowl, stir together the flour, sugar, chocolate chips, baking
  • powder and salt. In another bowl, stir together the banana, egg, oil and softened bran mixture until blended.
  • Make a well in the center of the dry ingredients. Add the liquid
  • ingredients and stir with a wooden spoon just to combine.
  • Spoon the batter into the prepared muffin cups, making each cup three
  • fourths full. Bake 20 to 25 minutes, or until the muffins are golden
  • brown and a cake tester or toothpick inserted into the center of one
  • muffin comes out clean. Cool the muffins in the pan on a wire rack for 5 minutes. Remove the muffins from the cups and finish cooling on the rack.
  • Serve warm, or cool completely. You may store the muffins in an airtight container at room temperature.
