How to make it

  • In a food processor whizz sugar, flour, baking powder, salt and butter until you get a crumbly cookie consistecy.
  • Add oats. You can either do this by hand if you want them whole of whizz them in the food processor (I did).
  • Butter a square baking dish and pour 3/4 of the batter on the bottom. Press gently and smooth it out with the back of a spoon.
  • Pour the jam over the dough and level it out.
  • Crumble the rest of the dough over the jam.
  • Bake in a pre heated oven (180C/365F) for about 35 min or until golden brown.
  • Take the dish off the oven and let it cool down before cutting into squares.
