Raspberry Oat Bars

- 1 cup light brown sugar, don't pack it too much shopping list
- 1 and 1/2 cup flour, all purpose shopping list
- 1 and 1/2 cup oats shopping list
- 1 tsp baking powder shopping list
- 200gr/1 and 3/4 stick cold butter, cut into pieces shopping list
- 1/4 tsp salt shopping list
- under 1 cup raspberry jam (I used seedless - you could use your favourite jam, doesn't have to be raspberry) shopping list
How to make it
- In a food processor whizz sugar, flour, baking powder, salt and butter until you get a crumbly cookie consistecy.
- Add oats. You can either do this by hand if you want them whole of whizz them in the food processor (I did).
- Butter a square baking dish and pour 3/4 of the batter on the bottom. Press gently and smooth it out with the back of a spoon.
- Pour the jam over the dough and level it out.
- Crumble the rest of the dough over the jam.
- Bake in a pre heated oven (180C/365F) for about 35 min or until golden brown.
- Take the dish off the oven and let it cool down before cutting into squares.
