How to make it

  • 1. Chop the cranberries finely and place in a large mixing bowl
  • 2. Cover with the sugar and salt and mix well and allow to macerate at least 2 hours.
  • 3. Grate the apples and add with the chopped nuts and and combine well
  • 4. In a seperate bowl whip the cream till stiff peaks.
  • 5. Gently fold the cream together with the rest of the ingredients and pour evenly into a 9x13 inch pan and freeze till solid or overnight ideally.
  • 6. Thaw slightly about 10 mins and cut into squares and serve.
