How to make it

  • After melting the butter, stir the brown sugar into it.
  • Combine the dry ingredients: flower oatmeal cocoa baking powder and salt. whisk together.
  • Lightly stir the egg and add the vanilla. Add both the dry and the egg/vanilla to the butter/sugar.
  • Since these cookies are going to be sandwiched together, make the same size. (I do my best!!)
  • Use 2 silpat covered baking sheets and place at least 2 inches apart.
  • Bake at 350 for 10 to 12 minutes. Let cool on baking sheets before transferring to cooling racks. Cool completely before filling.
  • Filling can be either vanilla ice cream or Buttercream frosting.
  • 2 Tablespoons of ice cream between 2 similar cookies. Freeze 24 to 36 hrs before serving
