Mexican Layered Casserole Recipe

How to make it

  • Preheat oven 350 degrees.
  • Grease a 13 x 9 in pan.
  • Lay 8 corn tortillas so they cover the bottom of the pan.
  • In a large skillet, brown the sausage, ground beef , garlic and onions over medium-high heat and drain any grease off.
  • Mix in salsa, beans and taco seasoning
  • Spoon 1/2 of meat mixture on top of the tortillas in the pan.
  • Add 1/2 the cilantro cream on top of meat mixture in pan. Spread as evenly as possible.
  • Sprinkle 1/3 of the cheese on top
  • Continue adding another layer of each.
  • Sprinkle top with green onions, remaining cheese, tomatoes and black olives
  • Cover pan with lid or aluminum foil.
  • Bake for 30 minutes.
  • Uncover pan and bake for another 5 -10 minutes or until lightly browned
  • Before serving, sprinkle with chopped cilantro and squeeze juice of one lime over top.
