Cajun Jamblaya Rice Casserole

- 1 cup smoked sausage cubed shopping list
- 1 cup cubed smoked ham shopping list
- 1 chicken breast, cut into small bite size pieces shopping list
- 1 can tomatoes, diced shopping list
- 1 onion, chopped shopping list
- 2 stalks celery chopped shopping list
- 1 bell pepper, chopped shopping list
- 2 boxes Rice a Roni,( Spanish ) cooked according to package directions shopping list
- 1 small jar 2 cups) salsa chunky style shopping list
- 1/2 stick butter shopping list
- 1 tsp Zatarains Garlic and Herb spice or creole spice shopping list
- 8 ounces shredded cheese, cheddar or Mexican blend shopping list
- Olive oil shopping list
How to make it
- Prepare rice aroni according to package directions
- In a large skillet, sauté chicken, ham and sausage in a little olive oil
- Until lightly browned
- Stir in onions, celery, bell pepper and butter and cook over medium low heat until tender.
- Stir in tomatoes, salsa, and spices
- Lower heat to low, cover and cook 5 minutes
- In casserole dish, place 1/2 the rice in bottom of dish
- Top with half of the sauce meat and mixture
- Sprinkle with 1/2 of the cheese
- Top with second layer of rice
- Top with remaining meat sauce mixture and top with cheese
- Bake in preheated 350 onpven for 15-20 minutes
