Chocolate Cherry Cookies

- 1 cup all-purpose flour shopping list
- 1/3 cup unsweetened cocoa shopping list
- 1/2 teaspoon baking powder shopping list
- 1/2 teaspoon cinnamon shopping list
- 1/4 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1 cup sugar shopping list
- 1/3 cup butter, softened shopping list
- 1 teaspoon vanilla extract shopping list
- 1 large egg shopping list
- 2/3 cup dried tart cherries shopping list
- 3 tablespoons semisweet chocolate chips shopping list
How to make it
- Preheat oven to 350°.
- Combine flour, cocoa, cinnamon, baking powder, baking soda, and salt in a small bowl. In a large bowl add sugar, egg, vanilla and butter. Beat with a mixer at high speed until well blended. Reduce mixer speed to low and gradually add flour mixture until combined.
- Chop the cherries to a size equivalent to chopping one cherry in 3 parts. This prevents the cookies from crumbling. If you would like to see cherries on top, reserve a few to press on the top of the formed cookie before baking. Fold in chopped cherries and chocolate chips.
- Split the dough in two parts onto wax paper sheets and roll into long logs. Freeze the logs for at least an hour. When you are ready to bake, preheat the oven to 350 and prepare the cookie sheets with either baking parchment (my favorite) or coat with cooking spray.
- Slice off rounds of cookie dough with each log making about 16 cookies. Bake at 350° for 12 minutes or just until set. Remove from oven and cool completely on wire racks.
