Black Or Pink Beans In The Dominican Way

- 2 T olive oil shopping list
- 1 can Goya (my preference) Black or Pink beans drained and rinsed shopping list
- 1 ts p white vinegar shopping list
- 1 medium onion chopped shopping list
- 4 large cloves garlic minced shopping list
- ¼ c celery chopped shopping list
- 1 Cubanelle pepper, seeded and chopped shopping list
- 1 can Original Rotel Tomatoes (if you like really spicy try the Rotel with Habañero) shopping list
- 1 tsp chicken soup granules in 1 c boiling water shopping list
- 1/2 tsp oregano shopping list
- 1/8 tsp cumin shopping list
- 2 bay leaves shopping list
- If available use the following instead (2 stalks of fresh oregano stripped, 10 fresh chives 2 inches, 10 fresh parsley leaves, washed and chopped all together) shopping list
How to make it
- Place olive oil in a pan and heat until fragrant.
- Add garlic and onions and sauté until translucent, do not brown.
- Add celery and Cubanelle pepper and cook for about 4-5 minutes.
- Add Rotel and chicken broth, cook until liquid is reduced by half.
- Add beans and spices.
- Cook until hot about 15 minutes over medium heat and serve over
- white rice.
