Cheesecake Chocolate Chunk Cookies

- ¼ cup non-hydrogenated shortening shopping list
- ¼ cup coconut oil shopping list
- ¼ cup sugar shopping list
- ¼ cup brown sugar shopping list
- 2 packets Truvia (or 2 tbsp sugar) shopping list
- ⅔ cup low-fat cottage cheese, pureed shopping list
- ⅓ cup protein-fortified “milk” beverage(I used Milk to Go Sport) shopping list
- 1 tbsp vanilla shopping list
- ¼ cup chickpea flour shopping list
- ¾ cup all-purpose flour shopping list
- ⅔ cup oat flour shopping list
- ¼ cup whey protein isolate shopping list
- ¼ tsp nutmeg shopping list
- ¼ tsp baking powder shopping list
- ¼ tsp baking soda shopping list
- ¼ tsp salt shopping list
- 1 cup chopped milk chocolate shopping list
How to make it
- In a bowl, beat together the shortening, coconut oil, sugars and Truvia until well blended.
- Add the cottage cheese, protein-fortified “milk” beverage, vanilla and chickpea flour, beating well.
- Add the flours, whey isolate, nutmeg, baking powder, baking soda and salt and mix to combine.
- Fold in the chocolate.
- Wrap dough in plastic and chill 1 hour, or up to 3 days.
- Heat the oven to 350F and line baking sheets with parchment or SilPat.
- Scoop 20 balls of dough onto the sheets, flattening slightly.
- Bake, one sheet at a time, for 12 minutes. Cool on the sheets
