Banana Waffles

- For the Waffles (makes 4): shopping list
- 2 medium ripe bananas, mashed shopping list
- 1 and 1/2 teaspoons corn oil shopping list
- 1/4 cup egg whites shopping list
- 3/4 cup milk shopping list
- 1 teaspoon vanilla extract shopping list
- 3/4 cup whole-wheat flour shopping list
- 1/4 cup white flour (or use 1 cup white flour and skip the whole wheat) shopping list
- 1 teaspoon baking powder shopping list
- 1/4 teaspoon salt shopping list
- If you want to serve the waffles with something a little special, try this syrup, but it's optional! shopping list
- For the Syrup: shopping list
- 2 tablespoons all-fruit cherry or any berry jam shopping list
- 2 tablespoons maple syrup shopping list
- 3/4 teaspoon frozen orange juice concentrate, undiluted shopping list
- Toasted nuts (toasted in the oven, spread out on a cookie sheet, baked at 375 degrees until lightly toasted - this doesn't take long!) - then chop the nuts to sprinkle on top of each waffle - and a scoop of whipped cream never hurt a waffle! shopping list
How to make it
- FOR THE SYRUP:
- Combine all the ingredients for the syrup, mix well, and set aside. Preheat your waffle iron.
- FOR THE WAFFLES:
- Combine the bananas, corn oil, egg whites, milk, and vanilla in a bowl and beat until blended.
- Add the flours, baking powder, and salt and mix well.
- Spray the hot waffle iron with non-stick cooking spray.
- Spoon 3/4 cup of the batter onto the center of the waffle iron. Cook until a golden brown, or until it stops steaming. Repeat with the remaining batter.
